CRAFT TRAINED AS A CHEF IN SOME OF EUROPE'S FINEST HOTELS AND RESTAURANTS INCLUDING THE SAVOY, MAXIM'S DE PARIS AND THE ROYAL CRESCENT IN BATH, HE HAS SUBSEQUENTLY WORKED AND HELD SENIOR MANAGEMENT POSITIONS AND DIRECTORSHIPS IN OPERATIONS, SALES AND MARKETING BOTH IN THE UK AND INTERNATIONALLY FOR CORPORATE AND INDEPENDENTLY OWNED CONTRACT CATERING BUSINESSES.

FROM HAVANA, CUBA, RUBEN MOVED TO LONDON IN HIS TWENTIES. HIS FIRST JOB WAS IN THE FOODIE HUB THAT IS ST JOHN STREET IN CLERKENWELL, WHERE HE, BY PURE CHANCE AND DESTINY, TOGETHER WITH ONE OF THE FOUNDERS OF EAT, ED BENTLEY, BECAME THE CHEF BEHIND THE SUCCESSFUL AMANO CAFE.

RUBEN LATER TOOK OFF TO THAILAND, VIETNAM, CAMBODIA, ITALY, FRANCE, SPAIN AND MOROCCO TO LEARN MORE ABOUT THEIR CULINARY CULTURE.

HE HAS ALSO COLLABORATED ON BOOKS FOR MARY BERRY AND THEO RANDALL AND AS A PRIVATE CHEF FOR MODEL AND NUTRITIONIST, ROSEMARY FERGUSON, VICTORIA BECKHAM, SPANISH LABEL ZARA IN PARIS, TATE MODERN FOR THE JACKSON POLLOCK EXHIBITION AND JADE JAGGER'S CHARITY LAUNCH.

MORE RECENTLY RUBEN WAS CHEF/PATRON OF NOMADA, IN RUDE, WHICH WAS AWARDED TWO AA ROSETTES, WELL-KNOWN FOR ITS GLOBAL FUSION MENU USING CORNISH PRODUCE.
